nice light version of potato salad. can add what other herbs you like fresh ot dried. also nice with a clove of garlic added if you like garlic. dried dill weed is nice ... or chopped fresh parsley or cilantro

Recipe Ingredients for summer potato salad

24 oz Potatoes, Red, Flesh And Skin
0.5 cup, chopped Peppers, Sweet, Red
0.5 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
0.5 cup, chopped Onions, Spring Or Scallions
0.5 cup, diced Celery
2 serving Plain Fat Free
3 tsp Dijon Mustard
1 dash Pepper, Black
0.5 oz Lime Juice

Recipe Directions for summer potato salad

boil potatoes , dice veggies, add together Dijon, yoghurt and veggies with the lime juice. add black pepper and your chosen additional herbs and spices. this recipe is good because the extra spices can be change upped to go along with whatever else you are serving. using a bag of mini potatoes makes the prep and measuring very easy.
