Recipe Ingredients for Summer Potato Hash with Roasted Chicken

1 1/2 cups red potato
1/2 cup onion
1/2 cup tomato
1/2 cup zucchini
1 tablespoon olive oil
4 ounces chicken breast
1 tablespoon rosemary

Recipe Directions for Summer Potato Hash with Roasted Chicken

Chop potatoes, onion, tomato and zucchini into 1/2 inch pieces. Place vegetables in a square baking pan and toss with olive oil and rosemary. At this point, if you're feeling naughty or need some dairy, throw in a couple tablespoons of shredded cheese of any sort. This will alter the nutrition as stated. Put the chicken breast on top of the vegetables and cook for 30 minutes at 425, or until the potatoes become tender.
