Recipe Ingredients for Summer Pine Nut Couscous

1/2 lb. yellow squash
2 tsp. olive oil
1/2 tsp. garlic
1/3 c. couscous
1/2 c. water
2 T. pine nuts
1 T. parmesan
1/8 tsp. pepper

Recipe Directions for Summer Pine Nut Couscous

  1. Cooking Time: 15 minutes (or less)

  2. Dice yellow squash. Saute squash and garlic in olive oil until just barely tender. Add water and heat until boiling. Add couscous, remove from heat and let sit for 5 minutes.

  3. Add pine nuts, parmesan and pepper. Serve immediately.
