Pasta salad with veggies and mozarella

Recipe Ingredients for Summer Pasta Salad

2 cups rotini (4 cups cooked)
3/4 cup italian dressing
1/2 cup red peppers
1/2 cup green peppers
84 grams Bocconcini (2 pieces, fresh mozzarella)

Recipe Directions for Summer Pasta Salad

  1. Cook the pasta. Cool for a bit, then add 1/2 c italian dressing so it doesn't stick while chilling. Chill in the fridge until cool.

  2. Once cool, add peppers (cut to bite sized) and mozzarella (each ball cut into 6 pieces), and another 1/4 c or so italian dressing (to taste, really).

  3. Sometimes I add 1/2 cup halved baby carrots or some red onion as well.

  4. Quick and tasty summer side! Makes 1.75 quarts/7 cups. Serving size for recipe here 1 cup.
