Summer Pasta Salad Recipe

This is a light and tangy pasta salad. Any short noodle will work, I just like Fusilli. I also use broccolini instead of broccoli because it is smaller and more tender, but it's not listed in food index here.

Recipe Ingredients for Summer Pasta Salad

1 avocado
8 oz. Fusilli pasta
2 cups grape tomatoes
2 cups broccoli
2 tablespoons olive oil
6 tablespoons rice vinegar
2 tablespoons basil
2 cloves garlic
1/8 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Summer Pasta Salad

  1. Cook the pasta according to the box directions and rinse with cool water.

  2. Steam the brocolli or brocollini and cut into small pieces.

  3. Cut the avocado into small cubes.

  4. Cut the grape tomatoes in half.

  5. Combine the pasta, brocollini, grape tomatoes and avocado.

  6. Combine olive oile, rice vinegar, finely chopped basil, finely chopped garlic, salt and pepper. Pour over teh pasta medley.

  7. You may need to add more oil and vinegar if the pasta absorbs the liquid.

  8. Enjoy!

  9. Serves 4 for a main dish and 6-8 for a side dish
