Salad that keeps well in hot weather due to the high acidity in the recipe. A real crowd pleaser.

Recipe Ingredients for Summer Pasta Salad for a Crowd

32 oz ?sturdy? pasta (I used the Campenelle)
3/4 cup extra virgin olive oil
4 tablespoons mayonnaise
6 ounces champagne vinegar
6 ounces salami, chopped
6 ounces turkey pepperoni, chopped
1 small jar marinated mushrooms, chopped
4 ounces Kalamata olives, pitted and chopped
4 ounces green olives, chopped
16 ounces pepperoncini, sliced
6 tablespoons Parmesan cheese, grated
2 roast red peppers, diced
1 bunch green onions, chopped

Recipe Directions for Summer Pasta Salad for a Crowd

In a HUGE bowl, prepare the dressing, whisking the olive oil with the champagne vinegar and mayonnaise. Dump in the prepared pasta and the rest of the ingredients. Mix well. Salt and Pepper to taste. Cover and refrigerate overnight for best flavor. This can be made two days in advance if need be.
