A fresh meal of sauteÚd chicken, garlic, onion, zucchini, and tomato, served over penne or fettucini pasta.

Recipe Ingredients for Summer Pasta

3 breast, bone and skin removed Chicken, Breast, Meat Only
3 medium Squash, Summer, Zucchini, Includes Skin
1 tbsp Olive Oil
2 clove Garlic
2 cup chopped raw Grape Tomatoes
18 oz Penne
0.25 tsp Sea Salt
0.5 tsp Pepper, Black
1 large Onions

Recipe Directions for Summer Pasta

  1. Heat olive oil and minced garlic in pan over medium heat, then add cubed chicken and chopped onion.

  2. SauteÚ, stirring occasionally, until chicken is done and onions are soft, seasoning with salt and pepper as needed.

  3. Add cubed zucchini and grape tomatoes (sliced in half length-ways), and allow to simmer over medium-low heat, stirring occasionally, while pasta cooks.

  4. Serve over drained pasta, seasoning with salt and pepper as needed.

  5. This meal pairs excellently with a green salad, garlic bread, and riesling wine.
