Recipe Ingredients for Summer Pasta

1/8 cup pine nuts
5 ounces pasta
4 ounces fresh mozzarella
4 cloves garlic
1 teaspoon salt
1 tablespoon lemon peel
1/4 cup olives
1 1/2 cup tomatoes
1 cup basil
2 tablespoons olive oil
1/4 cup balsamic vinegar

Recipe Directions for Summer Pasta

  1. Begin heating pasta water.

  2. Cook garlic in olive oil till light brown.

  3. Add lemon zest and salt, and 1/8 cup balsamic vinegar.

  4. Add pine nuts and olives.

  5. Add pasta, the remaining balsamic vinegar, the tomatoes, and basil.

  6. Serve with mozarella on top.
