This hearty but not heavy summer soup will warm you up on a cool summer night. Loaded with protein and great summer veggies this recipe is filled with Everything necessary for a perfect qucik summer meal.

Recipe Ingredients for Summer Minestrone Soup

2 tbsp extra virgin olive oil
2 leeks, chopped white and light green parts only
2 celery stalks, diced
1 onion, chopped
1 1/2 tsp salt
2 zucchini, quartered and sliced
1 yellow squash, quartered and sliced
1 potato, peeled and diced
8 cups low sodium vegetable broth
8 cups baby spinach
1 cup macaroni, whole-wheat
15 oz chick peas, canned- drained and rinsed
1 cup frozen peas
1 fresh ground black pepper
1/2 cup parmesan cheese
2 garlic cloves, minced
1/4 cup flat leaf parsley

Recipe Directions for Summer Minestrone Soup

  1. In a large stock pot over medium high heat add olive oil, add leeks, celery, onion and ½ tsp salt, sauté for 7-10 minutes. Add garlic, zucchini, squash and potato and cook for 1-2 more minutes. Add vegetable broth and remaining salt and bring to a boil. Reduce to low and simmer partly covered 10-15 minutes. Add pasta and spinach cook 5 minutes. Add chickpeas and green peas and ¼ c parmesan cheese.

  2. When serving garnish with parsley and sprinkle of remaining cheese.
