Summer Minestrone with Pesto and Grilled Chicken

Recipe Ingredients for Summer Minestrone with Pesto and Grilled Chicken

2 tbsp olive oil
1 medium onion
4 cloves garlic
6 cups chicken broth
2 cups beef broth
2 carrots
2 stalks celery
2 red potatoes
1/2 lb green beans
2 zucchini
5 tomatoes
1/2 oz parmesan
40 oz foster farms boneless, skinless, chicken breast
15 oz. bush's beans, white
1 1/2 cups elbow macaroni
2 cups spinach
8 tbsp pesto sauce

Recipe Directions for Summer Minestrone with Pesto and Grilled Chicken

  1. First the prep work - chop the veggies into to 1 inch pieces as above..

  2. To skin tomatoes: drop 2-3 tomatoes at a time into rapidly boiling water. Cook until skin splits, about 1-2 minutes. Remove and immediately plunge into ice water to stop the cooking. The skins will slide off easily now. Core and remove seeds, then chop tomato flesh.

  3. Heat oil large pot over medium-high heat.

  4. Add 2 bay leaves and saute a few seconds.

  5. Reduce heat to medium and add onion and garlic. Saute until onions translucent.

  6. Add chicken broth, beef broth, carrots, celery, potatoes, green beans, zucchini and tomatoes, and parmesan rind. Bring just to boil, then decrease to low.

  7. Cook until potatoes are soft, about 30-45 minutes depending on size of pieces.

  8. Add ground pepper to taste.

  9. Cook the pasta and grill chicken breast while soup is cooking.

  10. Add white beans, cooked pasta and pesto towards the end.

  11. Chop the grilled chicken and add to soup.

  12. Place spinach in serving bowls, tearing into bite-sized pieces, and pour hot soup over spinach.

  13. Makes 20 cups
