3 cup Potato Gnocchi, Homemade Style

1 tbsp Olive Oil
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
3 cloves Garlic
6 plum tomato Tomatoes, Red, Ripe
10 sprigs Parsley
2 cup Chard, Swiss

Recipe Directions for Summer Gnocchi

  1. prepare gnocchi

  2. combine other ingredients in skillet to make sauce

  3. add gnocchi once it's boiled

  4. salt & pepper to taste

  5. top with chopped parsley, a splash of balsamic vinegar, a squeeze of lemon, and nutritional yeast
