Lovely berry muffins, great for dessert or for kids lunch boxes or an after school snack. Can also use, red-currants, strawberries, raspberries, blackberries etc.

Recipe Ingredients for Summer Fruit Muffins

280 g plain flour
3 tsp baking powder
1/2 tsp salt
140 g granulated sugar
1 egg
240 ml milk
90 ml vegetable oil
170 g Blackcurrants

Recipe Directions for Summer Fruit Muffins

  1. Prepare muffin tins. Preheat oven to 190-200c.

  2. In a large bowl, sift together: flour, baking powder, salt and sugar.

  3. In another bowl, beat egg with a fork. Stir in milk, followed by oil.

  4. Pour all of wet ingredients into dry. Stir just to combine. Batter will be lumpy but no dry flour should be visable. Gently fold in berries at the end, using only a couple of strokes to avoid crushing the fruit.

  5. Spoon into muffin cases. Bake for 20-25 minutes. Frozen fruit will require an extra 5 minutes. Muffins are done when tops are slightly browned and spring back when pressed gently.
