This is a light salad that is perfect for hot summer days! I wasn't able to plug it into the system this way, but be sure to use "Parmesan Couscous" (Near East brand) which gives it lots of flavor!

Recipe Ingredients for Summer Couscous Salad

16 ounce chick peas
1/2 cup feta cheese
1/4 cup fresh parsley, chopped
1 red bell pepper, diced
1/2 large vidalia onion, diced
1 cucumber, diced
1 large tomato, diced
5 9/10 ounce Couscous
1/4 cup olive oil
4 tbsp lime juice
1/4 tsp salt
1/8 tsp pepper

Recipe Directions for Summer Couscous Salad

  1. Prepare couscous as directed on package.

  2. Whisk together olive oil, lime juice, salt and pepper; set aside.

  3. Combine remaining ingredients with couscous.

  4. Toss with dressing.

  5. This is best if you chill it for an hour or two, but it can be served at room temperature.
