This recipe takes 10-15 minutes from start to finish. The success of this dish relies on super fresh summer corn and tomatoes, (home grown or from the Farmers' Market) and good olive oil.

Recipe Ingredients for Summer Corn & Tomato Pasta

8 oz. pasta
2 large tomatoes, chopped
2 ears corn, kernels cut from cob
1/4 cup cilantro, chopped
1/2 tsp. red pepper flakes
1/4 c. extra virgin olive oil
1/2 tsp. Kosher salt

Recipe Directions for Summer Corn & Tomato Pasta

Put pasta water on to boil. While water is boiling, cut the corn kernels from the cob. Coarsely chop the tomatoes. Finely chop the cilantro. Set aside. Cook pasta according to package directions. 4-5 minutes before the pasta is done, heat the olive oil, and add all ingredients except the cilantro. Cook for 4 minutes, barely heating through. You do not want the tomatoes to collapse. Drain pasta well. Toss well corn-tomato sauce. Divide among 2 plates and top with cilantro. Drizzle with additional olive oil if desired.
