Summer Chicken Recipe

A light chicken and summer veggies.

Recipe Ingredients for summer chicken

3 chicken breast
1 cup zucchini
1/4 cup white onion
1 medium Roma Tomato
1 tbs minced garlic
1 serrano pepper
1 Salt and pepper to taste

Recipe Directions for summer chicken

  1. add garlic, tomatoes, onions, serrano and zucchini in deeper frying pan, on medium high heat, cook until veggies until right before they start to become soft (adding VERY small amounts of water to keep it frying). Salt and pepper to taste now, making slightly over salted as the water and chicken will bring down the saltyness.

  2. Cut chicken breasts into halves and in with the veggies. Stir.

  3. Add in 1 cup of water and stir. reduce to low and cook until chicken is done.
