This salad doesn't even need dressing! Its so refreshing and sweet. Bit high on the calroies but it has lots of protien and the fat is all from the almonds.

Recipe Ingredients for Summer Chicken Fruit Salad

2 c lettuce
3 strawberries
1 Anjou Pear
5 oz of chicken
2 tbsp sliced almonds
1/4 c. mandarin oranges

Recipe Directions for Summer Chicken Fruit Salad

  1. lay the lettuce out on a plate, top with fruit. Slice the pears in half longways and then section them into 3 or 4 parts. You can also buy the pears in a can with the oranges and save yourself some time. Slice the strawberries, and another time saver is to buy canned chicken.

  2. If you feel the need for dressing I usually use a light Raspberry Vinegarette or just save some of the fruit juices from the cans and use that with a bit of olive oil. Its perfect!
