Clafoutis, a deliciously easy dessert from the Limousin region of central France, can be prepared with any fruit.

Recipe Ingredients for SUMMER BERRY CLAFOUTIS

2 oz Fresh Churned Butter Unsalted
1 cup Pure Almond Original
0.5 cup Sugars, Granulated
2 large Egg, Whole
1 tsp Vanilla Extract
0.5 tsp Salt, Table
0.5 cup Wheat Flour, White, All-purpose, Enriched, Bleached
3 medium (2-1/2" dia) (approx 4 per lb) Peaches
1 cup Blueberries

Recipe Directions for SUMMER BERRY CLAFOUTIS

  1. Preheat oven to 350F.

  2. Brush a 9-inch deep-dish pie plate or 6-cup shallow oven-proof dish with some of the butter.

  3. In a food processor, combine remaining butter, milk, eggs, vanilla and salt.

  4. Process briefly until combined.

  5. Sprinkle with flour.

  6. Process until smooth.

  7. Spread berries evenly in buttered dish.

  8. Carefully pour batter over berries. Bake for 45 to 55 minutes or until batter is just set in the center and clafoutis is puffy and golden.

  9. Let clafoutis cool slightly, then dust with icing sugar if desired.

  10. Cut in wedges and serve warm with creme fraiche or ice cream.
