My take on a recipe from dietician Emma Blank

Recipe Ingredients for Sultana & Apple Bran Muffins

125 g Stone Ground 100% Wholemeal Plain Flour
160 g oat bran
1 cup oats
2 tsp baking powder
10 g baking soda
2 tsp ground ginger
2 tbsp canola oil
1/2 cup honey
1 cup low fat milk
200 g Natural Yoghurt
2 eggs
1 cup sultanas
1 cup pie apple
3 serving LSA

Recipe Directions for Sultana & Apple Bran Muffins

  1. Preheat oven to 180deg C and lightly grease a 12 cup muffin pan

  2. In a large mixing bowl combine dry ingredients

  3. Beat eggs and combine wet ingredients in a separate mixing bowl

  4. Combine wet and dry ingredients, with fruit (dice pie apple first) until just combined

  5. Spoon mix into muffin pan and bake for 20 minutes
