Invented by a clever baker on the Recipezaar site, I discovered these treats after giving up on refined sugars but desiring that chocolaty fix.

Recipe Ingredients for Sugarless Coconut Almond Brownies

120 grams dates (that's about 1 cup of chopped dates)
100 ml water
2 eggs
150 grams coconut, unsweetened
80 grams almonds, raw, in pieces (about 2/3 cup)
30 grams unsweetened cocoa powder (about 1/3 cup)

Recipe Directions for Sugarless Coconut Almond Brownies

  1. Chop the dates and stew them stove-top on low in the 100 ml of water until they are soft and some of the water is absorbed.

  2. Beat the eggs (not too frothy) and then add the unsweetened coconut, raw almond pieces and cocoa powder to them. Combine well.

  3. Press the dates and water through a strainer, or process the dates until smooth, and add to the mixture. (I just potato-mashed them in the stewing pot.)

  4. Mix everything together into an even batter.

  5. Bake 15 min at 175 C/350 F in a small baking pan. (An 8" x 8" pan makes a ~3/4" deep brownie.)

  6. PS. Note the generous 9 x 63 g servings for this dessert and still a CC Grade of B :) Have less & feel even better!
