Recipe Ingredients for sugarless banana bran muffins

1 c flour, sifted
2 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1 c bran flakes, crushed
2 small bananas, ripe, mashed
1 egg, beaten
1/4 c skim milk
2 tbsp vegetable oil
1/2 c currants

Recipe Directions for sugarless banana bran muffins

  1. Mix flour, baking powder, salt, cinnamon and bran.

  2. Combine egg, bananas, currants, milk and oil.

  3. Make a well in center of dry ingredients and add liquids all at once.

  4. Stir just to moisten.

  5. Coat muffin pans with cooking spray

  6. Divide batter evenly between 12 cups.

  7. Bake at 400 degrees for 15 minutes or until done.

  8. Serve at once or warm later.
