Sugar Free Pumpkin Pie Recipe

I haven't actually tried this yet, so I don't know if it will come out. It is an adaptation of the Libby recipe.

Recipe Ingredients for Sugar free pumpkin pie

3/4 c splenda no-calorie
1 tbs cornstarch
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
2 egg whites
15 oz pumpkin
12 oz evaporated milk
150 g fat-free cool whip
1 1/2 c Special K cinnamon pecan cereal, crushed

Recipe Directions for Sugar free pumpkin pie

  1. Preheat to 350 degrees.

  2. Combine Splenda, spices and salt

  3. Beat egg whites

  4. Stir in pumpkin and spice mixture

  5. Spray pie tin with non-stick

  6. Pour cereal into bottom of pie pan

  7. Pour pumpkin mix over it

  8. bake until set.

  9. Refrigerate until cool, at least an hour.

  10. Top with fat free cool whip.
