Most of the fat and calories from this sugar free pumpkin pie come from the crust. The sugar is natural and comes from the pumpkin.

Recipe Ingredients for Sugar Free Pumpkin Pie

3/4 cup Splenda
1/2 teaspoon salt
2 teaspoons of pumpkin spice
1/4 teaspoon ground cloves
2 large eggs
15 oz Pumpkin
12 oz nonfat evaporated milk
1 1/2 cups flour
1/2 tsp. salt
8 tablespoons shortening
1/4 cup water

Recipe Directions for Sugar Free Pumpkin Pie

  1. Mix sugar, salt, pumpkin pie spice in small bowl. Beat egss in large bowl. Stir in pumpkin and sguar-spice mixture. Gradually stir in eaporated milk.

  2. To make the crust cut in 1 1/2 cups flour, 1/2 tsp. salt, 8 tablespoons of shortening, and 1/4 cup water. Cut in until small pea shapes are evident. Then sprinkle water gradually. Roll into a ball. Refrigerate for as long as you want. Then roll out into a pie crust.

  3. Pour the pumpkin mixture into the crust. Bake in preheated 425 oven for 15 minutes. Reduce temp to 350. Bake for 40 minutes more or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving if you want to add more calories and make it taste really yummy.

  4. Of course you can always add sugar instead of Splenda to add even more calories.
