Trying to replicate a cookie I had from a bakery. They are surprisingly good!! **Notes: I added in 1/2 cup more oatmeal, some more flour (maybe 1/4 cup), 1 extra tsp cinnamon, 1/2 tsp extra vanilla. I didn't use the water it called for as it was already quite liquidy. Next time I would maybe cut the oil down to about 1/4 cup and add more applesauce instead. I also added more raisins than it called for

Recipe Ingredients for Sugar Free Oatmeal Cookies 1

1 1/4 c. whole wheat flour
1 1/4 c. oatmeal
2 tsp. ground cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. ground nutmeg
1/4 tsp. ground allspice
1/4 tsp. ground cloves
1/2 c. raisins
1 c. unsweetened applesauce
1/8 c. olive oil
2 eggs
1 tsp. vanilla extract
1/4 c. chopped walnuts
1/4 c. dried apricots
3 tbsp unsweetened coconut
1/4 tsp. salt

Recipe Directions for Sugar Free Oatmeal Cookies 1

  1. Combine all ingredients except fruit/coconut/nuts in a mixing bowl. Mix well.

  2. Divide dough in half, add chopped apricots and coconut to half. Add raisins and nuts to the other half

  3. Drop with medium cookie scoop onto a parchment paper covered baking sheet.

  4. Bake in a 360 degree oven for 10 minutes or until browned.

  5. Makes 32 cookies
