Recipe Ingredients for Sugar-Free Chocolate Fudge Brownie Waffles

4 ounces unsweetened chocolate
1/3 c butter
1 1/2 c all-purpose flour
1 T baking powder
1/2 tsp baking soda
1/2 c Splenda
1 T unsweetened cocoa powder
3 eggs, separated
1/2 c skim milk
1/2 c fat-free sour cream
1 tsp vanilla extract

Recipe Directions for Sugar-Free Chocolate Fudge Brownie Waffles

  1. Preheat waffle iron.

  2. Preheat oven to 250°F (120°C).

  3. In a small, heavy saucier or double boiler, melt chocolate and butter over low heat.

  4. In a medium-sized bowl, sift together flour, baking powder, baking soda, Splenda, and cocoa powder.

  5. In a large bowl, beat together egg yolks, milk, sour cream, and vanilla. Gradually stir in flour mixture and melted chocolate and butter. Beat until smooth.

  6. (Optional) stir in 3/4 C chopped nuts (will increase calories per serving).

  7. In a small bowl, whip egg whites until soft peaks form. Fold into batter. Batter will be thick.

  8. Lightly brush hot grids with shortening or oil. Pour enough batter to fill two-thirds of the waffle iron, then push the batter out to the edges with a wooden spoon. Cook until crisp and a dark, rich brown, taking care not to overcook!

  9. Keep finished waffles warm in the oven on a rack until ready to serve. Repeat with the remaining batter. To serve, cut waffles into quarter sections.

  10. (Optional, when serving) sprinkle powdered sugar thorugh a fine sieve over the top (adjust calorie count accordingly).
