Recipe Ingredients for Sugar-Free Banana Bread

1/4 cup ICBINB, melted
1/4 cup no sugar added applesauce
2/3 cup sugar free maple flavored syrup
1/2 teaspoon maple extract
1 egg
2 ripe bananas, mashed
2 oz sugar free yogurt , about 1/4 cup
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/3 cup chopped walnuts

Recipe Directions for Sugar-Free Banana Bread

  1. Preheat oven to 325 degrees F (175 degrees C). Grease a 5x9 inch loaf pan.

  2. In a large bowl, mix the melted butter and maple syrup. Beat in the egg and bananas, leaving a few small chunks. Stir in the maple extract and yogurt.

  3. In a separate bowl, mix the flour, baking soda, and baking powder, and stir into the banana mixture just until moistened. Transfer to the prepared loaf pan. Mix the chopped nuts and sugar, and sprinkle evenly over the batter and press down slightly.

  4. Bake 45-55 minutes in the preheated oven.
