Sugar/fat free Banana Bran Muffins

Recipe Ingredients for Sugar/fat free Banana Bran Muffins

1/3 cup unsweetened apple sauce
1/2 cup SPLENDA No Calorie
3 small bananas, mashed
1/4 cup (8th Continent) Light Original Soy milk
1 teaspoon vanilla extract
1/4 cup egg beaters
1 egg whites, beaten
1 cups Whole Wheat Flour
1/2 cup wheat bran
1/2 tbs baking powder
3/4 teaspoon baking soda
1 tsp ground cinnamon
1/2 teaspoon salt

Recipe Directions for Sugar/fat free Banana Bran Muffins

  1. 1. Preheat oven to 375 degrees F .

  2. 2. Spray muffin pan with Pam Spray or line with paper muffin liners.

  3. 3. In a large mixing bowl, mix apple sauce and Splenda. Add bananas, soymilk, vanilla and egg beaters; mix well. Stir in flour, bran, baking powder, soda and salt; blend just until moistened.

  4. 4. Beat egg whites in a mixer until fluffy white peaks form. Gently fold them into the batter.

  5. 5. Pour 1/3 cup batter into each prepared muffin cup.

  6. 6. Bake at 375 degrees F for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean. Cool in the cups for 5 minutes, then remove muffins and place on a wire rack to cool completely.
