Recipe Ingredients for Sue's version of Jamie's Cheat Pizza yummy

125 g self-raising flour (1 cup), plus extra for dusting
1/2 cup water, tepid
1/2 tsp extra virgin olive oil
125 g passata (1 cup)
1 medium tomato, chopped/ sliced
2 tbsp fresh basil
1 clove garlic
1 tbsp red wine vinegar
35 g buffalo mozzarella
10 g Parmesan cheese, grated
3 slices of salami
1 teaspoon fennel seeds
22 g red chili pepper, fresh (half a chili)

Recipe Directions for Sue's version of Jamie's Cheat Pizza yummy

  1. Turn the heat under the frying pan up to high and dust a clean surface with flour.

  2. Put flour into a food processor, then add tepid water with a drop olive oil. Whiz until smooth and the dough forms into a soft ball.

  3. Tip dough on to the floured board, and scoop up remaining dough from food processor using a blob of the dough to wipe clean.

  4. Sprinkle the top of the dough and the rolling pin with flour (the dough will be quite wet, so be generous with the flour). Roll the dough to a 1cm thickness.

  5. Drizzle olive oil into the pan, then dust the dough with flour again and very lightly fold it over into a half-moon shape. Lightly fold the half-moon in half, then move the dough to the pan and unfold it, pushing it down into the sides of the pan. (If you are making a bigger pizza and have increased the quantities to serve 4, and you don?t have a pan big enough, don?t cook all of the dough at once, halve it and make two pizzas.

  6. For the topping, put a third of the tinned tomatoes into a liquidizer with a few sprigs of basil, peeled clove of garlic, a splash of red wine vinegar, a drizzle of extra virgin olive oil and a pinch of salt. Whiz until smooth. Pour over the middle of the pizza base and spread out evenly.

  7. Tear mozzarella into small pieces and dot around the base. Finely grate a layer of Parmesan over, then top with the salami slices.

  8. I like to bash the fennel seeds in a pestle & mortar and finely chop the chilli, then scatter them over the pizza. Put the pan under the hot grill for 4 or 5 minutes, until golden and cooked through.

  9. Serve with a fresh green salad.
