One pot oven cooked meal. This recipe is for 2 servings, with some stew left over to make a meal the following day reheated and stirred into cooked noodles (hence 3 servings, the third serving is the sauce for a quick supper for 2 the next day).

1 cup butternut squash, peeled and cut into 1/2-inch cubes
1 cup mushrooms, sliced
390 g chopped tomatoes
250 g borlotti beans, tinned and drained
5 g vegetable bouillon stock, or 1 tsp
1 cup water
3 cloves garlic, minced
1 teaspoon oregano
1 tbsp basil
1/4 teaspoon ground black pepper
1 pinch of salt
1/4 cup all-purpose flour
25 g cornmeal
20 g Parmesan cheese, grated
1 tablespoon fresh parsley
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 tablespoon 1% fat milk
3/4 tablespoons extra virgin olive oil
1 pinch of paprika
1/2 cup frozen green beans

Recipe Directions for Sue's Vegetable Stew with Corn Dumplings yummy

  1. Preheat oven to 150C if slow cooking over 5-6 hours or 180C if cooking over 2 -2.5 hours.

  2. Combine butternut squash, mushrooms, chopped tomatoes, garlic, Italian seasoning, and pepper.

  3. Mix vegetable bouillon into boiling water, pour over vegetable mixture and stir together.

  4. Cover and cook in oven.

  5. For dumplings: In a medium bowl, stir together flour, cornmeal, grated parmesan cheese, parsley, baking powder, and salt. In a small bowl, whisk together egg, milk, and oil. Add to the flour mixture; stir with a fork just until combined.

  6. If using low-heat setting, turn to high-heat setting.

  7. Mix frozen green beans into stew.

  8. Drop the dumpling dough into 4 blobs on top of the stew. Sprinkle with paprika. Cover and cook for 50 minutes more, ensuring you do not lift the lid during this part of cooking to allow dumplings to rise.

  9. Serve hot.
