Recipe Ingredients for Sue's Turkey and Butternut Squash Cottage Pie yummy

2 cups butternut squash
1 tbsp extra virgin olive oil
1 medium onion
2 cloves garlic
250 g mushrooms
1 tsp fresh thyme
330 g turkey
187 ml red wine
1/4 tsp chili flakes
1/4 tsp Worcestershire sauce
1 orange
2 tbsp plain flour

Recipe Directions for Sue's Turkey and Butternut Squash Cottage Pie yummy

  1. Peel, seed and chop up butternut squash, put in a steamer and steam for 20-30 mins over boiling water until tender enough to mash.

  2. Peel and chop onion and garlic, fry in most of the olive oil.

  3. Cut mushrooms into thick pieces and add to pan with thyme leaves. When softened, transfer to mixing bowl.

  4. Add remainder of oil to pan, add turkey, season with salt and pepper, stir in flour, cook for 2-3 mins and add wine and Worcestershire sauce. Cook for 5 mins then tip into baking dish.

  5. Mash squash and add in grated orange zest and seasoning of salt and pepper if you need to.

  6. Pile squash mash on top of turkey and bake for 35-45 mins or until lightly browned and crisp on top.

  7. Serve with green vegetables.
