Recipe Ingredients for Sue's Toffee yummy

1/2 cup rice syrup
1/2 cup butter

Recipe Directions for Sue's Toffee yummy

  1. Pour some cold tap water into a mug, put next to cooker.

  2. Place a sheet of baking parchment on baking tray and grease with butter.

  3. Melt butter in a small heavy saucepan, over low heat.

  4. Add sweetener and stir continually with a wooden spoon until mixture comes together and pulls away from the side of the pan. Immediately test by dropping a small drop into the mug of cold water, it should harden straight away, then immediately pour mixture onto the baking sheet without delay to prevent burning.

  5. ALTERNATIVELY use a candy thermometer in the pan and stir until mixture reaches 270F. Then remove from heat and pour onto baking sheet.

  6. Using a palette knife, spread the hot mixture across the baking sheet aiming for even thickness of toffee.

  7. After a couple of minutes, using a piece of kitchen paper, wipe butter or oil along the knife blade and then score the toffee mixture into squares or rectangles, cutting through to the foil.

  8. Leave to cool for half an hour or however long it takes for the toffee to cool and set.

  9. Break into the scored squares or rectangles and serve.

  10. Keep in airtight container in the fridge for up to a week.
