Recipe Ingredients for Sue's Rum Fruit Balls yummy

1 cup raisins
1 cup oatmeal
1/4 cup pumpkin seeds
1/4 cup hazelnuts
1/2 cup soy milk
1 tsp cider vinegar
1 orange
1/2 tbsp rum
1 tbsp coconut
1 tsp caster sugar

Recipe Directions for Sue's Rum Fruit Balls yummy

  1. Put tsp of vinegar into the milk and stir, to turn into similar consistency to buttermilk. Leave for 10 mins.

  2. Finely chop nuts and roughly chop raisins, in a food processor if preferred.

  3. Grate zest of orange and squeeze orange juice.

  4. Stir in milk, orange juice, orange zest, and rum.

  5. Shape into small balls, about 30.

  6. Mix coconut and sugar.

  7. Roll balls in the coconut sugar mix. (Not included in recipe but if available, roll in lemon juice first.)

  8. Place on tray tray lined with waxed or baking paper, chill in fridge until firm.

  9. Once firm, store in covered container in fridge.
