Recipe Ingredients for Sue's Roasted Vegetables and Pasta with Cream Cheese sauce yummy

1 medium courgette
1 medium red bell pepper
1 medium yellow bell pepper
1 red onion, peeled and cut into about 12 wedges
2 cloves garlic, peeled and finely sliced
25 g sun-dried tomatoes in oil
3/4 tbsp olive oil, from the sun-dried tomatoes
1/2 tbsp chopped fresh sage
120 g wholewheat penne pasta
60 g Philadelphia Light
30 ml hot water
5 g vegetable bouillon

Recipe Directions for Sue's Roasted Vegetables and Pasta with Cream Cheese sauce yummy

  1. Pre-heat the oven to 190˚C, gas mark 5 and have ready a roasting tin.

  2. Cut the courgettes and peppers into chunky bite sized pieces and place in a bowl with the onion and garlic. Halve the sundried tomatoes and add to the vegetables with the tomato oil. Chop or tear the sage, mix well together and place into the roasting tin. Bake for 25-30 minutes until the vegetables soften and begin to brown.

  3. Meanwhile cook the pasta until al dente (around 10-12 mins).

  4. Drain the pasta and return to the saucepan. When the vegetables are ready add them to the cooked pasta. Stir in the Philly and the stock while the mixture is hot so that a creamy sauce is made. Season to taste and serve.
