Oven roasted fresh beetroots with goat's cheese

Recipe Ingredients for Sue's Roasted Beetroot with Cheese Supper yummy

500 g beetroot
1 clove garlic
1 tsp fresh thyme
1 tbsp extra virgin olive oil
60 g feta

Recipe Directions for Sue's Roasted Beetroot with Cheese Supper yummy

  1. Scrub beetroot but leave whole. Place on large piece of foil for wrapping and roasting and scatter with garlic, thyme and oil. Wrap up in foil, loose but sealed. Bake on baking tray in oven at 200c/Gas 6 for about an hour until tender (when knife goes easily into beetroot).

  2. Cool enough to chop off top and tail (and skin if required). Cut into slices.

  3. Slice or crumble cheese on top while warm so cheese can melt.

  4. Optional and not included in recipe: for summer dish serve on fresh green lettuce leaves with salad dressing and crusty bread and sprinkle of crushed walnuts; for winter dish serve with green vegetables and whole parsnips and carrots oven-roasted in extra virgin olive oil and spices/herbs of choice (eg crushed cumin seeds).
