Recipe Ingredients for Sue's Raspberry Brulee yummy

1 tsp vanilla sugar
1 tsp vanilla extract
60 g demerara sugar
150 g raspberries (or mixed berries such as blueberries, blackberries)
150 g low fat Greek yoghurt

Recipe Directions for Sue's Raspberry Brulee yummy

  1. Add berries to small saucepan or casserole pan with a tablespoon of water, and heat for a couple of minutes without stirring, just to let the fruit juice run and the fruit remain whole (not mushy).

  2. Remove from heat and pour into small baking tin for 2 portions (or individual heatproof pudding bowls/large ramekins).

  3. Place yoghurt in a bowl and add vanilla sugar and vanilla extract and mix together completely.

  4. Pour yoghurt over the fruit so it covers and seals the fruit.

  5. Cover with clingfilm and leave in fridge for 2 hours or more.

  6. Preheat grill to hottest heat first.

  7. Spread demerara sugar thickly and as evenly as possible on top of the yoghurt.

  8. Spray sugar lightly with water.

  9. Set close under grill to caramelise the sugar. Or use a blowtorch if you have one.

  10. Once the sugar has caramelised, put back in the fridge to set to a crusty surface.
