Quinoa salad is a great shot of protein.

Recipe Ingredients for Sue's Quinoa Salad

2 tbsp Extra Virgin Olive Oil
0.5 cup, chopped Peppers, Sweet, Red
0.5 medium raw Carrots
0.5 cup Onions
2 tbsp Parsley
2 clove Garlic
1 cup Quinoa
2 tsp Cumin
1/4 tsp Sea Salt

Recipe Directions for Sue's Quinoa Salad

  1. Take the one cup of quinoa (I prefer the Presidents choice organic). If bulk make sure you rinse VERY well!

  2. Bring 2 cups of water to boil and add the quinoa.

  3. Lower, cover and simmer for 15 minutes.

  4. While the quinoa is cooking chop 1/2 cup of onions, red pepper and carrots.

  5. In a large frying pan add oil and carrots, onions, red pepper, garlic and cumin. Cook for 10 minutes or until vegies are cooked.

  6. Fluff the quinoa once it has settled for 5 minutes.

  7. Add to cooked vegetables.

  8. Serve cold or hot.
