Recipe Ingredients for Sue's Pesto Pasta yummy

120 g whole wheat pasta
1 tsp extra virgin olive oil
10 g Parmesan cheese
50 g almonds, whole, blanched
2 cloves of garlic
1 fresh red chili pepper
2 cups fresh basil including stalks
2 anchovies tinned in oil
100 g cherry tomatoes, red and yellow if possible
1/2 tsp black pepper, freshly ground
1 pinch of sea salt

Recipe Directions for Sue's Pesto Pasta yummy

  1. Add the pasta and boiling water to the large saucepan, turn up to a high heat, and cook according to the packet instructions, with the lid askew. Fill and reboil the kettle for topping up, if needed.

  2. Put the Parmesan, almonds, peeled cloves of garlic and chili (stalk removed) into a food processor and whiz until fine. While the processor is still running, add basil leaves and stalks, anchovies and two-thirds of the cherry tomatoes - but reserve a few basil leaves for garnishing.Whiz to a paste, then add a drop or 2 of extra virgin olive oil.Taste and season if needed, then put aside.

  3. Halve or quarter the remaining tomatoes, then put aside. By now the pasta should be perfectly cooked, so drain, reserving some of the cooking water, and return it to the hot pan to keep the pasta nice and moist.

  4. Add the paste to the pasta, mixing well to coat the pasta. Add a splash of water to make it silky and loose.

  5. Add the remaining halved tomatoes and basil leaves to garnish.

  6. Serve with fresh green salad and home made garlic bread.
