9" round flan - vegan, no eggs or dairy. Can use any vegetables of choice. A light and filling flan. Does not reheat well though - tastes ok but the flan does not hold its texture as well as an egg mix.

Recipe Ingredients for Sue's Mushroom and Tomato Flan yummy

250 g wholemeal flour
125 g flora original
4 tbsp water
1 tsp extra virgin olive oil
3 tomatoes
100 g mushrooms
2 cloves garlic
225 ml soy milk
15 g wine vinegar
3 tbs soy sauce

Recipe Directions for Sue's Mushroom and Tomato Flan yummy

  1. Prepare pastry: Put ice cubes in jug with water.

  2. Rub in flour and cold refridgerated margarine.

  3. Pour slowly 1 tbsp of iced water into mixture and mix in. Repeat quickly until dough is ready, ie if it can squeeze into a ball. Do not use more than total 5 tbsp of water.

  4. Put pastry into fridge for 20 mins. During this time you can prepare pie, flan or crumble filling.

  5. Place dough on floured surface and roll to required thickness. Roll it gently onto rolling pin and then unroll it onto flan or pie dish.

  6. For flan, prick pastry all over with a fork, spread some dried beans over it to prevent puffing up, and bake for 10-12 mins in hot oven at 425F / 218C / Gas 7. Remove and cool on wire rack.

  7. Any leftover pastry can be used to make tarts or pasties filled with savoury or sweet filling.

  8. Skinn and crush garlic.

  9. Add garlic to a blender with soy milk, vinegar and soy sauce and blend to smooth consistency. Season as required (I usually add a squirt of Worcestershire sauce and a blob of mustard).

  10. Slice mushrooms and tomatoes into thick slices and arrange in the flan base.

  11. Add the soy milk mixture. Sprinkle with any dried or fresh green herbs at hand, to garnish.

  12. Bake in middle of moderate oven (177C/350F/Gas mark 4) for 30 minutes.

  13. Serve hot with salad or vegetables.
