Mushroom risotto for supper (the butter version).

Recipe Ingredients for Sue's Mushroom Risotto yummy

130 g risotto rice
1 medium onion
250 g mushrooms
1/2 tbsp extra virgin olive oil
7 g butter
187 ml white wine
1 tsp mixed herbs
1 tsp parsley
5 g vegetable stock

Recipe Directions for Sue's Mushroom Risotto yummy

  1. In a heavy bottomed saucepan and using a wooden spoon, saute onion and garlic in olive oil on low to medium heat until soft but not brown.

  2. Toast rice as follows. Add rice to saucepan and stir to coat well until grains are transparent but still pearly white not brown, for about 4 minutes.

  3. Raise heat to medium. Add wine and herbs, stir in until evaporated.

  4. Prepare stock by adding boiling water to stock powder/mix.

  5. While rice mix is on medium heat, add one ladleful of prepared hot stock liquid and simmer, stirring continually to keep mixture from sticking to pan.

  6. When the stock is absorbed into the rice mix, add another ladleful of stock and stir until absorbed. Continue in this way stirring continually until all stock is absorbed. Do not leave the mixture, but turn down heat to low to medium if necessary.

  7. Taste rice after 14-16 minutes from when first stock was added. This cooking process should take about 18 minutes altogether, until rice is soft tender and creamy but the grains are still firm in the centre (not hard).

  8. Risotto should not be so hard it sticks to the serving spoon, or so liquid that it runs off. The perfect texture is supple, creamy, slightly soupy consistency, with body.

  9. Stir in the roughly chopped mushrooms.

  10. Stir in the butter to counterbalance the acidity of the wine.

  11. Remove immediately from heat and leave for no less than 2 mins for mushrooms to gently soften in the heat and to give time for flavours to blend.

  12. Serve immediately.
