Tasty way of slow-cooking stewing beef or lean beef mince, with orange and dried fruits. I like to serve one meal for 2 with rice, a second meal for 2 with couscous the next day, and the 5th portion as a leftover sauce with noodles for 2.

Recipe Ingredients for Sue's Moroccan Beef with Dried Fruits yummy

1 tsp cinnamon
1 pinch of saffron strands
1 1/2 tsp cumin, ground
1 1/2 tsp coriander, seeds, ground in mortar
1 tbsp ground turmeric
1 tsp ground ginger
1 tbsp extra virgin olive oil
1 carrot, finely sliced and diced
120 g celery (2 large sticks), finely sliced
1 onion, peeled and finely chopped
3 cloves garlic, finely chopped
2 tsp fresh ginger, peeled and finely grated
350 g lean beef mince
20 g vegetable bouillon (2 tsp vegetable stock powder)
1 litre boiling water
1 cup freshly squeezed orange juice
200 g passata
3 prunes, chopped
1 pinch sea salt
1 pinch black pepper, freshly ground
1 tsp honey
50 g cup dried apricots, roughly chopped

Recipe Directions for Sue's Moroccan Beef with Dried Fruits yummy

  1. Mix cinnamon, saffron, cumin, coriander, turmeric and ginger together.

  2. Put the olive oil into a large pan and heat, add onions.

  3. Add half of the spice mix and saute until onions are turning soft and golden, but watch carefully to prevent burning. Remove onions with a draining spoon and set aside.

  4. Add beef and cook until browned.

  5. Add onion mix back to pan.

  6. Add stock cube mixed with boiling water, and the orange juice.

  7. Add passata and chopped prunes.

  8. Add salt and pepper, boil and then reduce heat to simmer slowly on low heat, with lid on the pan, for 2-5 hours, the longer the better.

  9. Half an hour before the end of cooking, add remaining spice mix, apricots and honey and stir.

  10. Remove lid and simmer for 30 mins.

  11. Serve with rice or couscous.
