Home made lemon curd - 1 small jam jar. Adapted from Nigel Slater recipe. http://www.guardian.co.uk/lifeandstyle/2010/mar/07/nigel-slater-lemon-curd-recipes If you can't find unwaxed lemons, wash the lemons with soap and water to remove the waxy coating before grating the zest. This recipe will be as good as the lemons - heavy yellow lemons, juiced at room temperature to release as much juice as possible. Avoid dried out fruit. Take care to grate lightly to obtain the bright lemon outer zest, not the bitter tasting layer of pith underneath.

Recipe Ingredients for Sue's Lemon Curd yummy

2 lemons, unwaxed, zest and juice
80 g sugar
40 g flora original margarine
1 egg
1 egg yolk

Recipe Directions for Sue's Lemon Curd yummy

  1. Take a heatproof bowl that will fit over a saucepan of water without actually touching the water.

  2. Grate zest from the lemons into the bowl, gently enough to remove only the bright yellow outer layer.

  3. Squeeze the lemon juice into the bowl, taking care to exclude or remove pips.

  4. Add the sugar and margarine and set the bowl over a pan of simmering water, making sure that the bottom of the bowl does not reach the water.

  5. Occasionally stir with a whisk until the margarine has melted.

  6. Mix the egg and egg yolk lightly with a fork, and stir into the lemon mixture.

  7. Cook the curd, stirring frequently, for about 10 minutes until it thickens to a custard consistency and feels heavy on the whisk.

  8. Remove from the heat.

  9. As it cools, stir from time to time.

  10. Pour into spotlessly clean jar, cover with disk of waxed paper or baking paper, and seal.

  11. Store in fridge, use within a fortnight.

  12. Serve as spread on fresh bread or toast, swirled into natural yoghurt or creme fraiche, or on hot pancakes or toasted crumpets.
