Korean fermented or pickled cabbage, for rice dishes. Need to soak vegetables in salted water overnight before preparing, and leave for several days to ferment before eating.

Recipe Ingredients for Sue's Kimchi yummy

1 1/5 kg Chinese cabbage (a medium to large cabbage weighing 1.1-1.3kg or 2 1/2-3lbs)
80 g Asian white radish (1 large long radish)
1/4 cup sea salt
4 spring onions, chopped into half inch pieces
4 garlic cloves, finely chopped
2 tablespoons fresh ginger, finely chopped
2 tablespoons chili powder
2 litres water

Recipe Directions for Sue's Kimchi yummy

  1. Pour salt in a cup of water, stir and set aside to dissolve.

  2. Wash cabbage thoroughly and cut into 2 inch lengths.

  3. Peel white radish and cut in half lengthwise, then slice into quarter inch pieces.

  4. Place cabbage and radish in a large bowl and pour salt water over them. Soak overnight.

  5. After soaking, drain the vegetables - make sure you keep the salted water for later.

  6. Add spring onions, garlic, ginger, chili powder to the drained vegetables.

  7. Mix all vegetables thoroughly by hand to mix the flavourings throughout. Use clean rubber gloves to prevent chili from stinging.

  8. Pack all in a large jar (size about 2 quart size).

  9. Pour the salted water over the mixture, leaving an inch of free space at the top.

  10. Cover tightly.

  11. Let sit in a cool dark place for 2-3 days depending on how you like the taste of kimchi.

  12. Refrigerate after opening.

  13. Serve as side dish with Korean meals, rice and beef, rice and fish, rice and spicy vegetable pancakes etc.

  14. You can use remaining vegetable bits to make filling for savoury pancakes.
