Absolutely delicious vegetable fajitas served with gorgeous halloumi cheese - needs to be served with guacamole and salsa (these are not included in recipe).

Recipe Ingredients for Sue's Halloumi Fajitas yummy

60 g halloumi cheese
1 small red onion
1 red bell pepper
1 yellow bell pepper
1 small zucchini
2 cloves garlic
1/2 tbsp sea salt
230 g limes (4 limes)
80 g fresh coriander
1/2 tsp oregano
1/2 tsp chili flakes
1 tsp cumin seeds
1 tsp sugar
1 tbsp white vinegar
50 ml rum
50 ml extra virgin olive oil
4 tortillas

Recipe Directions for Sue's Halloumi Fajitas yummy

  1. (You need to have either prepared home made guacamole and salsa ready, or have shop bought versions at hand to serve.)

  2. Make marinade by crushing garlic and salt in a mortar and crush to paste.

  3. Transfer to bowl and add zest of 2 limes and juice of 4 limes, fresh chopped coriander, oregano, dried chili flakes, crushed cumin seeds, sugar, white wine vinegar, and rum (all except oil). Whisk together.

  4. Add oil in steady stream and whisk until emulsified/blended together.

  5. Put sliced peppers, onions and courgettes in container and cover with marinade. Leave for at least 30 mins.

  6. Wrap tortillas in foil and put in preheated oven at 150C/300F/Gas mark 2 for about 15 mins.

  7. Heat oil in large frying pan.

  8. Drain halloumi and chop into small cubes. Cook over moderate heat for 10 minutes, turning, until golden.

  9. Serve tortillas, vegetables and halloumi separately so you can make up your own fajitas together with guacamole and salsa relish. Adding natural yoghurt as as a sauce makes a delicious alternative to sour cream and blends all the exciting flavours together.
