Vegetarian curry with boiled egg, spinach, butternut squash

Recipe Ingredients for Sue's Egg Spinach and Butternut Squash Curry yummy

3/4 tbs extra virgin olive oil
1 medium onion
4 cloves garlic
10 g raw ginger
1 tbs madras curry powder
2 chili peppers
1 serving vegetable stock
230 g butternut squash
2 medium eggs
125 g fresh spinach
1 x lemon
50 g fresh coriander
1/4 tsp cayenne pepper
15 g coconut

Recipe Directions for Sue's Egg Spinach and Butternut Squash Curry yummy

  1. Fry onions, garlic and ginger until onions are soft. Add chilis and dry spices, stir, cook for a couple of minutes, then add coconut and vegetable stock. Simmer for 15 mins.

  2. Peel, de-seed and chop butternut squash into pieces and cook in separate pan. Steam for 20 mins or until cooked.

  3. Hardboil eggs and remove shell.

  4. Add spinach to egg curry mixture. Add butternut squash. Add eggs until warmed through, and spinach is wilted.

  5. Add lemon juice and chopped fresh coriander.

  6. Serve with rice.
