This is a very rich dark chocolate version from Nigella Express using minimum 70% cocoa chocolate, if you prefer a very sweet rocky road or are making it for sweet toothies, substitute milk chocolate.

Recipe Ingredients for Sue's Dark Rocky Road from Nigella

125 g butter
315 g dark chocolate
3 tbsp golden syrup
200 g Rich Tea Economy Biscuits
100 g mini marshmallows
2 tsp icing sugar

Recipe Directions for Sue's Dark Rocky Road from Nigella

  1. Melt butter, golden syrup and chocolate (broken into pieces) in a heavy bottom saucepan on low heat, stirring throughout.

  2. When melted, scoop out about 125g of the mix and put aside to coat the top at the end.

  3. Bung biscuits into a freezer bag and bash with a rolling pin or heavy implement until you have a mix of fine crumbs and lots of pieces.

  4. Add biscuits to the melted chocolate mixture, followed by the little marshmallows.

  5. Fold it all in to the chocolate mixture.

  6. Tip the mixture into a 24cm square baking tray lined with baking paper, (or equivalent rectangular size).

  7. Put in the fridge and leave overnight.

  8. Cut into 24 squares or rectangles.

  9. Dust with icing sugar sifted through a tea strainer.

  10. About 130-168 calories a piece according to Calorie Counter, depending on which Rich Tea biscuits I selected - rather confusing as the calories don't differ much from brand to brand!
