Recipe Ingredients for Sue's Courgette and Pine Nut Pasta yummy

2 medium courgettes, quartered lengthways and finely sliced
4 cloves garlic
1 tbsp extra virgin olive oil
1 tbsp thyme fresh
2 tsp rosemary fresh
20 g pine nuts
20 g parmesan, roughly grated
120 g whole wheat penne
1/2 tsp black pepper

Recipe Directions for Sue's Courgette and Pine Nut Pasta yummy

  1. Finely slice garlic and courgettes (halve courgettes lengthways, then quarter, and slice thinly

  2. Heat up olive oil in pan

  3. Prepare fresh herbs (remove leaves from thyme stalks by running fingers along stalk from tip to root, take some small sprigs rosemary

  4. Put pasta in boiling water

  5. Add courgettes, garlic and thyme to hot oil and saute

  6. Toast pine nuts dry in a separate pan and set aside

  7. Add rosemary and pepper to courgette mix, taste and season accordingly

  8. Grate parmesan

  9. Drain pasta, mix into the courgette mix, and serve on warmed plates

  10. Sprinkle toasted pine nuts and grated sesame on top and serve
