A way to use up what I had left in the cupboard

Recipe Ingredients for Sue's Chocolate Brownie and Blackberry Pudding Yummy

60 g chocolate brownies, or 3 mini brownie pieces
2 tsp boiling water
1/2 tsp instant coffee
1 tsp dark brown sugar, muscovado
150 g blackberries
125 g natural whole yoghurt
1/2 tsp cocoa powder unsweetened

Recipe Directions for Sue's Chocolate Brownie and Blackberry Pudding Yummy

  1. Preheat oven to 180C.

  2. Remove yoghurt from fridge.

  3. Get 2 heatproof pudding bowls or large ramekins.

  4. Roughly crumble the chocolate brownies, and put half each into bottom of pudding bowls.

  5. Add instant coffee to boiled water, mix, and sprinkle over the brownies.

  6. Sprinkle brown sugar on top of the brownies.

  7. Place bowls in oven to warm for 5-10 minutes or so, just until sugar is melting and brownies are warm, but check to prevent drying, as ovens vary.

  8. Meanwhile place blackberries in a small saucepan and heat until a sauce starts to form but some of the fruit remains whole.

  9. Remove brownie bowls from oven and pour the warm blackberries mixture on top.

  10. Spoon yoghurt on top of fruit, dust with cocoa powder, and serve straight away.
