3 chili peppers
2 large scallions
1 tbsp extra virgin olive oil
1 tsp fresh thyme
80 g feta
250 g white bread

Chop fresh chilis finely. Slice spring onions/scallions thinly. Sizzle briefly in olive oil until soft but not browned. Add thyme, then add feta briefly until cheese is slightly softened. Scoop up feta and chili mixture and serve on sandwich of crusty rustic white bread.
