Recipe Ingredients for Sue's Chili Con Carne yummy

1 onion
2 cloves garlic
1 carrot
120 g celery, or 2 sticks
1 red bell pepper
1 tbsp extra virgin olive oil
1 teaspoon chilli powder (or chopped fresh chili pepper)
1 tsp cumin
1/2 teaspoon ground cinnamon
1 pinch of sea salt
1 pinch of black pepper, freshly ground
200 g red kidney beans, tinned, drained
400 g tomatoes, tinned
350 g minced beef, lean
1/2 cup fresh coriander
1 tablespoon balsamic vinegar

Recipe Directions for Sue's Chili Con Carne yummy

  1. Chop the onions, garlic, carrots and celery finely/

  2. Remove the stalk and seeds from red pepper and chop into pieces

  3. Put large casserole dish pan on a medium high heat

  4. and add olive oil and all chopped vegetables

  5. Add chilli powder, cumin, cinnamon, salt and pepper, cook for 5-7 minutes stirring frequently until softened

  6. Add drained kidney beans

  7. Add tinned tomatoes

  8. Add the minced beef, breaking up large pieces, and brown in the pan

  9. Chop coriander stalks and add to pan, keeping some of the leaves aside or in the fridge

  10. Add balsamic vinegar

  11. Taste, adding seasoning as needed

  12. Bring to the boil, then simmer for an hour on low heat with lid almost on, checking and stirring a few times

  13. Serve with a sprinkling of the coriander leaves on top, accompanied with rice and natural yoghurt
