Quick savoury rustic pie (or open pastie) for lunch, supper meal or savoury snack. Best served warm with fresh vegetables or packed cold into lunch box with Branston pickle and some pieces of carrot, celery, cucumber or cherry tomatoes

Recipe Ingredients for Sue's Cheese and Onion Foldover Pie yummy

100 g wholemeal flour, plus some for rolling
50 g flora original margarine
1 tbsp water, iced
1 onion, finely diced
40 g cheddar cheese, grated
1/2 tsp sage
1 pinch of salt
1 pinch of black pepper, freshly ground
1/2 tsp semi-skimmed milk

Recipe Directions for Sue's Cheese and Onion Foldover Pie yummy

  1. Preheat oven to 180C fan oven/200C/360F.

  2. Finely chop onions and roughly grate cheddar cheese.

  3. Rub in flour and margarine - use margarine straight from the fridge. Either whizz in a food processor or rub in by hand until consistency of soft breadcrumbs.

  4. Add 1-1 tbsp of iced water and mix until a lump of dough forms.

  5. Dust surface and rolling pin with flour and roll out dough into a round.

  6. Mix together onions, cheese, sage, salt and pepper and place in centre of pastry.

  7. Fold over edges of pastry and press into the onion and cheese mix to make a rustic pie or partly open pasty - there should be a hole in the centre where the filling is visible.

  8. Press a fork into the edges of the pastry to make a pattern.

  9. Brush pastry with milk and bake for 30 minutes.
