Recipe Ingredients for Sue's Cheese and Courgette Risotto Loaf yummy

160 g risotto rice
1 courgette
1 tbsp extra virgin olive oil
400 g canned chopped tomatoes
1/2 tsp balsamic vinegar
1/2 tsp dark brown sugar
2 tbsp basil
40 g mozzarella
40 g cheddar
20 g parmesan
4 tbsp breadcrumbs
1/2 tsp sea salt
1/4 tsp pepper

Recipe Directions for Sue's Cheese and Courgette Risotto Loaf yummy

  1. Slice courgettes lengthways into 5mm slices, brush with oil and and heat in a very hot grill pan until marked with charred stripes (or put on oiled baking sheet and roast in preheated oven at 200C/400F/Gas 6 for 15-20 mins) until golden. Set aside.

  2. Saute garlic in olive oil in saucepan.

  3. Add tomatoes, vinegar, sugar, salt, pepper and simmer for 10 mins or until sauce has thickened slightly. Add the fresh basil leaves.

  4. Add rice to saucepan of boiling salted water (no need to measure water), bring back to boil, reduce heat and simmer until rice is tender but still firm - about 10 mins.

  5. Drain rice and add to tomato sauce and mix well.

  6. Stir in the cheeses. Season if required.

  7. Toast breadcrumbs.

  8. Sprinkle half the breadcrumbs into greased loaf tin, tipping tin from side to side until coated

  9. Spoon in half rice mixture and smooth flat.

  10. Add courgettes in a layer.

  11. Add remaining rice and smooth flat, pressing firmly.

  12. Sprinkle with remaining breadcrumbs.

  13. Bake in preheated oven at 220C/425F/Gas 7 for 30-40 mins or until golden and bubbling around edges.

  14. Run long bladed sharp knife between torta and tin and turn out onto plate or platter, tap tin all over and lift off.

  15. Cut into slices and serve, with either green salad or green vegetables.
